About Vallee des Aigles : From winemakers Boris Kovac and David Serodes. Vallée des Aigles was born from their winemakers consultancy in Roussillon and the purchase of Domaine de L’Agly. Step by step they extended their selections to the Limoux area and then Carcassonne. All their vineyards are located in altitude.
Description : A blend of 65% Syrah, 25% Grenache and 10% Carignan. Inky in hue, with notes of blueberries, espresso, liquorice and hints of crushed stone. Full bodied but supple and easy to drink with lots of texture and complexity.
Winemaking : Local soil Mica-Shist on Blue Granite, altitude 280m. Manuel harvest into small crates, traditional vinification with punching down of the cap ion wooden casks. After 45 days of fermentation and vatting time, the wine is transferred into French and American oak barrels for ageing of close to 2 years.
