About Vallee des Aigles : From winemakers Boris Kovac and David Serodes. Vallée des Aigles was born from their winemakers consultancy in Roussillon and the purchase of Domaine de L’Agly. Step by step they extended their selections to the Limoux area and then Carcassonne. All their vineyards are located in altitude.
Description : Organic Carignan Vielles Vignes. Raspberry fruit picks up hints of Garriguella, green peppercorns and floral notes, while the full bodied palate is silky and smooth and the flavours linger on the finish.
Winemaking : Owning only 3.5 hectare of their own Carignan Vielles Vignes, for several years they have been working with many old Carignan vine producers in Roussillon. Each year, each owner works their own vines, collaborating with each producer to check on maturity and define the date of harvest and vinification. All plots do not mature at the same time, they are picked by hand and vinified separately in Serodes & Kovac winery. The blending takes place one the alcoholic and malolactic fermentations are completed. The wine is ages 12 months in French oak barrels before bottling.
