Winemaking: At harvest time, part of the grapes are handpicked and vinified according to the traditional red wine vinification; the remaining grapes are left drying on the vines and picked up later, when completely dried (withering process “appassimento”). As soon as fermentation of the Primitivo grapes from the first harvest is completed, the obtained wine is repasted on the dried Primitivo grapes pomace which is very concentrated and rich in aromas and sugars. As a consequence a second fermentation starts increasing the alcohol percentage, reducing sugar content and giving the final wine a deeper colour and richer aromas.
Description: Generous bouquet with fruity aromas of blackberries, cherries, sour cherries and plums. Hints of balsamic herbs and floral notes. Full bodied and balanced with intense fruity return. Nice acidity and velvety tannins. long and dry finish.
